Tiramisù lovers this ones for you!! Whether or not you like matcha, if you like tiramisu- you will love this version. The matcha is not strong or overpowering; it’s subtle, and adds a gentle floral earthiness, which combines beautifully with the nutty pistachio which we whip into the mascarpone cream and each layer is sprinkled with crush pistachios.

I used my favourite matcha powder and honey to sweeten it, as the soak-base for the biscuits. For the pistachio paste, store brought or homemade is fine! I ran out of store-brought so I made my own in the food processor. Full details below if you would like to make it yourself too! (It’s a quick process don’t worry)

I’ve been seeing many matcha-tiramisu’s (matchamisu ?) making their way around social media, and then for some reason (which i’m loving) Miffy (an animated bunny-like character) has been making an appearance as the decoration for these tiramisus! So of course I had to try it - and I do think food tastes better when it looks cute….

Feel free to decorate how your heart desires, however avoid sifting the top layer of matcha immediately. Assemble the tiramisu, and let it chill in the fridge overnight. When you take it out, sift before serving. If you sift the final layer of matcha before it chills, when you take it out afterwards, you will see the matcha has almost absorbed and become moistened by the cream underneath and it’s just not that pretty, but of course it doesn’t affect the taste.

(To make a design, cut out the shape using parchment paper or foil and gently place on top of the cream before sifting)
