If you’ve ever craved a whole cake just for yourself (no judgment here), this mini lemon blueberry cake is your dream come true. It’s perfectly sized for 2–3 modest slices or one generous solo serving; it’s super fluffy and zesty with juicy blueberries in every bite. It’s paired with a homemade lemon curd filling, and lemon cream cheese frosting for an all-over flavourful and tangy lemon cake.

The cake is made with a butter and oil mix, for moisture and flavour. If you are wondering what type pans to use, I used these ones from amazon that come in a pack of 4, and are deep tins, making it super useful.
